Saturday night I made chicken sandwiches. I used the chicken patties from Banquet, and I think they were all breast meat, and quite affordable. I baked them and served them on buns with lettuce, tomato and mayonnaise, and served baked beans and potato chips on the side.
Tonight I made pancakes. From a “fat free – just add water” mix. Ugh. I haven’t made pancakes in a long time, and that reminded me why I don’t use mixes. The kids liked them, but I felt like I needed to drown them in syrup to give them any flavor, which kind of defeats any caloric benefit you get from them being fat free.
This week I’ll be cooking from the pantry, so we’ll see if I come up with some new recipes. Luckily, the pantry is rather well stocked, and there’s salmon, whitefish, hamburger and sausage in the freezer.
