Rellenos

Mmmm… I made my Chile Rellenos Burritos today. Everyone pigged out. Even Kenner had seconds! And, best of all, I still have two left for lunch tomorrow. Yay!

Dinner

My hubby is on his way home. He got an earlier flight – we were expecting to not see him till after 10pm, but he’ll be home by 4:30. I want to cook him a nice dinner, but I also don’t want to go to the store – there is a lot of snow out there. So I’ll probably make Spanish Rice. I have all the stuff.

Eventually, I’d like to have a really well stocked pantry, so choices abound on days like this.

Spanish rice, Goulash

Made spanish rice again this evening. I really need to post my updated recipe, it’s very good. Had it with a salad. Yum. Later in the week, I’ll make goulash, but I want a few days in between since they are both tomato dishes.

I will probably make pot roast tomorrow night.

Shepherd’s Pie Results

I just saw that I never said how the shepherd’s pie came out. It was good, the whole family liked it a lot, but I think I’d like it the good old-fashioned way better.

Not cooking

I’m not feeling well, so Alyson’s making Hamburger Helper for everyone. It’s great having a teenage daughter! :-)

I made some of the best spanish rice I’ve ever made last week. I’m making it again sometime in the next 8 days, so I’ll post it again here when I do.

Leftovers from Christmas

We’ve been eating all the leftover salmon, crab and shrimp the last couple of days, so I haven’t been cooking. But on Christmas Eve I cooked a lovely roast. I used one of those roasting bags, which I hadn’t used before, but it was nice. No mess to clean up! Yay! And the entire family liked it. Sylvia ate seconds… and thirds.. and fourths (which Sylvia just doesn’t do).
